I canned 7 quarts of sliced peaches. I don't know how they will really turn out, but they seem ok. They're a lot sweeter than I would have made them if the peaches had been good.
Following a recipe, I decided to try peach honey. Basically, I boiled the peach skins in water (I used the syrup from canning the sliced peaches), then strained them by running them through the food mill. After that, I poured the boiled skin liquid through a pillowcase to strain all the pulp out.
Then, I added a pretty substantial amount more sugar (and a cup of honey for good measure). And then, I boiled it for about an hour and a half to reduce the amount of liquid.
Basically, I've made very concentrated sugar syrup (bordering on candy-think) with peach flavoring. It's pretty awesome on bread, if you like really sweet toppings.
