CORNISH HENS GLAZED IN HONEY

Ingredients
2 cornish hens
1/2 cup orange juice
1/4 cup honey
2 T. butter
1 T. dried rosemary
1 t. dried thyme
1 t. powdered ginger
salt and pepper to taste

Wash hens and remove giblets.  Cut hens in half lengthwise, pat dry with a paper towel, season with salt & pepper, and set aside.

In a saucepan combine orange juice, honey, butter, rosemary, thyme, ginger.  Cover and heat on "low" until butter is melted and honey is soft.  Stir together.  Simmer on low for 15 minutes.  Increase heat and simmer, uncovered, for 10 minutes until slightly thickened.  Set aside until warm, not hot.  Strain to remove rosemary.

Preheat oven to 325 degrees.

Place hen halves. meat side up, on a baking sheet covered in aluminum foil.  Brush with sauce.  Place in oven for  90 minutes , brushing with sauce every half hour and 10 minutes before serving.

The recipe is based on several others, but the exact ingredients and proportions are all mine.
