Spinach Soup

 Minestrina di spinaci

Ingredients
2 10 oz packages of frozen spinach, or 2 lbs fresh
4 T. butter
2 cups meat broth (chicken or beef)
2 cups milk
1/4 t. nutmeg
5 T. freshly grated Parmesan cheese

If using frozen spinach, thaw and squeeze dry on paper towels.  If using fresh spinach, cook in a little water until done, drain in a colander, squeeze dry on paper towels, then chop.

Put chopped spinach into a stock pot with 4 T. butter and saute over medium heat for 2-3 minutes

Add broth, milk, and nutmeg.  Bring to a simmer, stirring frequently

Add Parmesan cheese and cook for one more minute, stirring two or three times.  Serve immediately.
