Recipe: Swedish Oatmeal Cookies

Swedish Oatmeal Cookies

Notes|  Makes about 50 cookies.
1 serving =2 cookies. Cookies come out fairly large when rolled into walnut size balls. Cinnamon chips add 1 point to cookies (without chips serving is 3 points for those on Weight Watchers)

If you do not add cinnamon chips add maybe 1-2 tsp of cinnamon.

Cookies are suppose to be crispy and will spread when baking.

Ingredients

  • 1 cup butter
  • 3/4 cup sugar
  • 1 tsp baking soda
  • 1 cup all-purpose flour
  • 2 cup uncooked oatmeal
  • 1 large egg yolk(s)
  • 5 oz cinnamon chips (1/2 bag-Hershey's make them)
  • 1 tsp vanilla extract

Instructions


    Melt butter in microwave.

    Cool to room temp and add sugar.

    Add baking soda, flour, oatmeal and vanilla.

    Beat the egg yolk before adding to mixture. Add yolk until it is incorporated

    Add cinnamon chips if desired.

    Grease cookie sheet with non-stick cooking spray.

    Make small balls of dough and put them about 12 to a sheet.

    Press down with a fork making a crisscross pattern

    Bake at 350 F for 10-12 minutes or until they start to brown at edges.

    Cool on rack for 2 minutes before completely cooling on cookie racks
