I told
magisterequitum that I would post this recipe.
It is very easy and tasty.
1 c butter
2 cups packed brown sugar
2 eggs
2 tsp vanilla extract
1 3/4 c flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt (I do not add this since I use salted butter)
3 cups of oats
1 1/3 cups or 1-8oz package of Heath Bits 'O Brickle Toffee Bits
1 c sweetened cocunut flakes -optional and I do not use them
Heat over to 375 F
Beat butter till creamed, add sugar, eggs and vanilla and beat on medium. Put mixer on low add flour, baking soda and cinnamon till blended. Stir in oats till blended. Mix in toffee bits by hand or mixer on low.
Drop by spoon on to lightly greased cookie sheet and bake about 8-10 minutes. Cool 1 minute on pan then transfer to rack.
Makes about 4 dozen cookies.
