Are there any current or erstwhile McDonald's employees reading this? Are McDonald's restaurants supplied with real eggs, like, in shells, or are the breakfast egg pucks achieved by unnatural means ("pour 100mL of chilled albumin slurry into poach-hopper. Does it amuse your hosts to see what the American will eat, or is it no big deal because it's just their everyday food?

In China, I almost never get the feeling that people are trying to feed me something gross to shock me. I'm sure the client ordered what he did because it sounded tasty as hell to him; he said, "You can't get this in America," implying, "Lucky you that you get to have it here!"

The worst is when clients try to be nice and accommodating of my ostensibly squeamish American palate: that always means the dreaded KFC breaded gristle sandwich.

It seems to me, Elyse, that you prefer authentic Chinese food to American food. Based on the way you trashed egg mcmuffins and then raved about the Szechuan restaraunt. Most Americans would be the exact opposite.

I'm American and I'd totally chow on about half of what she mentioned over a nasty fake egg McMuffin any day. Ugh. Most of what she mentioned sounds delish, except the feet. The feet look chewy.

Hey, don't insult American food. Egg McMuffins are not "real American food", because DAMN that would be sad for America.

To me, "real" American food is New England clam chowder and Southern fried chicken and New York pizza and Shaker soups and gumbos and Maryland she-crab soup...and yes, hamburgers and apple pie.

But not McDonald's hamburgers and apple pie. Ronald Jackson has a simple but comprehensive cookbook called "The American Table" that I've been cooking my way through. THAT's American food to be proud of. :D

Anyway, Elyse, I have such food envy--authentic Szechuan is so amazing. And writing-style envy.

Americans eat frogs, too. My father's whole, Southern family is wild about frog legs. And cold, cow tongue sandwiches, prairie oysters (testicles), etc.

To make it more appealing, we (Chinese) call it "field chicken" instead of frog. So it was such an accurate description that Elyse said it was chicken-esque meat. Altho having said that.. doesn't a lot of meat that're kinda bland and not have a whole lot of taste described as 'chicken like'?
