Work is driving me insane... but when I stop to think about it, the same exact thing happened at the same time last year. Which means... yay, I'll enjoy being stressed straight through 12/17, whereupon I'll be bored. At least I'm taking the week between Christmas and New Year's off. So that's something. Very far away it seems at the moment.

Okay, so in the past 24 hours I've had some yummilicious things that I will share. Both were 2 points and (in the opinion of my taste buds) amazing. I did not come up with either of these things!
1-
Hungry Girl's Super-Cheesy Crazy-EZ Shepherd's Pie. I read about this at her web site last week, thinking it has the air of Sandra Lee about it (cooking with pre-prepped ingredients), but I know I've used 2 of the 3 ingredients in other applications and thought it may be nice to try in this particular combination. Not that I normal seek out Shepherd's Pie, but I've been in some need of comfort, and this has it in spades.
The dish is truly super easy to make and... wow, delicious! I was kind of shocked at how good it was. I mean, from the standpoint alone amount of effort put in versus flavor coming out, it was great but... I really truly enjoyed it very much. Of course, not to leave anything alone even the first time I cooked it, I did happen to mod. Between the veggie and potato layer was a layer of me spicing. A little salt, pepper, garlic salt (really not too much salt, I promise) and a teeny-tiny pinch of cayenne because it seems I want everything to be on fire when I eat it these days. After the potato later, I put on a tiny bit more salt, but paprika for color. because I feel I never actually taste paprika. Who knows. In any case, it was amazing and I'll make it over and over again. 2 points per serving!
2 - Broccoli, Egg, Cheese and Sausage soufflé type apparatus! This one I did not come up with... maybe Hungry Girl or some adventurous weight watchers member. It's basis is simple: Take a 0-point Green Giant Just For One Broccoli and Cheese tray. Nuke for a little bit to defrost/cook a little (I cooked for 1.5 min). Pour in some egg beaters (I measured out a 1/4 cup serving) for 1 point. Mix, nuke for another 1.5 min or so, and then BAM! soufflé. Tasty.
This has been around forever, and I've always wanted to try it but a) I learned early on that while I can tolerate egg beaters, I don't really like them in most eggular applications and b) I was so crazy about the Green Giant trays that I burned myself out quickly on them, so I hadn't used them in a long while (though they did make a brief return as baked potato topping, but still were not persued greatly). I was watching someone at work make one last week and decided to take the plunge. Here's where my mod comes in... the morning I went shopping for the ingredients, I saw on
Hungry Girl (God Bless Her!) a tip about
Jimmy Deans Turkey Sausage Crumbles. I picked some of those up too. I threw in half a serving of those into my soufflé prior to the 2nd heating and... OMG! Gorgeous flavor! I enjoyed every bite (so delicious) and was sad when it was gone. The best thing though (BEST thing) is that it kept me satisfied straight through lunch. I forgot all about my mid morning snack! 2 points per serving!
Yes, I know... all preprocessed junk, full of sodium (and shame on me for adding salt to anything...) but I tell you what: as a woman pressed for time, these are a God send. Because most of the time I find the quick and easies taste like crap. At least not this time around!
