I wanted to put together the recipes for seasonal green smoothies from
Whole Life Nutrition together in one place. I cut the portions on each of these in half since my mixer is smaller.
Autumn Smoothie 2 honeycrisp apples, cored and cut into chunks
2 small bartlett pears, cored and cut into chunks
1 white peach, pitted
1 lemon, juiced
1 chunk of ginger
3 to 4 cups water
3 to 4 collards leaves
3 to 4 kale leaves
2 to 3 large handfuls spinach leaves
Place the apples, pears, peach, lemon juice, ginger, and water into the Vita-Mix, blend until smooth. Add the greens, a little at a time, blend, and then add more greens, blend again until smooth. Taste the smoothie to determine if it needs more greens, fruit, lemon, or water.
You can also add grapes if you like, and other greens (carrot tops, bok choy, cabbage, arugula, spinach, lettuce).

Winter Smoothie 2 Granny Smith apples, cored and cut into large chunks
2 pears, cored and cut into large chunks
handful of fresh or frozen cranberries
1 to 2-inch piece of fresh ginger
2 cups of water
6 to 7 large kale leaves
4 to 5 large collard greens
large chunk of green cabbage (about 1 to 2 cups chopped)
handful of fresh parsley
Place apples, pears, cranberries, ginger, and water into a high-powered blender and blend until smooth. Stuff in the greens and blend again until smooth. Add more water for a thinner smoothie.
Store in a glass jar in the fridge for up to a day.

Spring Smoothie 2 ripe pears, cored
2 apples, cored
2 kiwis
1 very large chunk of fresh ginger
2 lemons, juiced
water
Blend the fruit mixture until smooth and creamy.
Then stuff in as many greens as can fit into the mixer and blend again, adding more greens as the previous ones have blended. Use whatever greens please you ... sorrel, kale, collards, dandelion ...

Summer Smoothie 3 large peaches, pitted
2-inch piece fresh ginger
1 small bunch bok choy
1/2 bunch kale
1 medium cucumber
large handful fresh mint
2 to 3 cups water
Place all ingredients into a Vita-Mix or other high-powered blender and blend until smooth. Add more water for a thinner smoothie. If it is too bitter, add another piece of fruit. Add a squeeze of lime to each serving if desired.
If you don't have peaches use plums, apples, pears or a mixture of frozen blueberries and cherries instead (however, using blueberries or cherries means the finished smoothie won't be green anymore). If you want to make this more refreshing on a hot summer afternoon, add a few handfuls of ice cubes to the blender and blend again.
