Non-turkey day

I'm soooo excited... A woman I know through Ellen's rescue has invited me and hubby over to her place for a vegan Thanksgiving. Ellen will be there as well and it will be the first time in years I won't have to worry about what's in anything on the table. I will be able to eat anything I want and not have to worry about chicken broth, or cheese, or milk or.... Do you have any idea how much I'm looking forward to this? I will be making a vegan cheesecake which, by the way, is amazingly good. I might make pumpkin muffins too, any excuse to make those is a good one by me. *grin*

On a side note... I'm nervous and excited that tomorrow I will actually be riding my baby. It will be on a long line for safety but I will be riding her none the less. She will have a full 60 days of training on her, my DH said yesterday she can stay at the barn another month. I was shocked, to say the least. I was expecting to wait till after the first of the year to get her back up there, I'm not going to question it. The more time she has the safer I'll be and that's all that counts in the end.

I think I found a decent vegan recipe for sugar cookies, the last one I tried was horrible. This one sounds muuuuuch better so I'm off to give it a try. He'll be happy to come home to sugary goodies.

P.S. Someone's gift arrived in the mail todaaaaay! I'll get it out tomorrow.
