Potato Bacon Chowder
6 servings
• 2/3 bottle Hormel real bacon pieces, or 8 slices bacon, fried and crumbled
• ¼ c. chopped onion OR 1 TB sautéed minced garlic
• 1 c. sour cream
• 4 c. cubed potatoes ( I prefer Yukon Gold, but any will work.)
• 1 ¾ c. milk
• 1 can cream of chicken soup
• 1 tsp. seasoned salt
• ½ tsp. pepper
Prep: If needed, fry bacon and crumble. Saute onions or garlic in drippings. If no drippings, sauté in 1 TB. Butter or margarine. Peel potatoes and cube.
Recipe:
Boil peeled, cubed potatoes in 1 1/3 c. water till soft. Add all the other ingredients except bacon and mix gently till well-combined. Heat thoroughly. Sprinkle bacon on top to serve. Or you can mix bacon in with other ingredients while heating. I’ve done it both ways.
Suggestions: Don't forget the salt and pepper, and the more onion and bacon the better, really. |D
