How about buying a pumpkin? You could head out to one of the local farms and pick up a few for not a lot of $$, and then self process... thereby supporting a local business, decreasing your environmental footprint, and having a good time all in one autumnal festival of yumity goodness!

you have a food mill for the squishifying, 'cause i certainly don't.

i have made pumpkin gunk from scratch before. man, what a mess!

however, i think having the seed for roasting almost balances that out.

If you have a blender it works just as well. That's how I puree mine when I cook them.

Blender will work, but you'll need to do it in batches.

Also, a potato ricer can come in handy if you've got one to do it manually.

I could send you some of what I have in the freezer from my last batch,as long as it doesn't cost an arm and a leg to send it. =)

no worries. i am sure i will find some up here in one of the many other markets. i was just surprised that two of the largest chain groceries didn't have any in stock.

i am talking safeway (von's) and fred meyer (ralph's).

I've dug up a recipe of mine (original) and here's the post, too good not to share:

that book would definitely be an excellent purchase 'cause i went to the publisher's site where they are selling the worldwide demand version for $795! ;p

the version which addresses the demand for pumpkin in greater china is $495.

i should have known there would be reports like this available. so, it isn't a fluke. there really is a shortage. damn.

as for the organic pumpkin, i have an order for books sitting in my shopping cart anyway which will qualify for free shipping. i may as well add the pumpkin to it! thanks for the link. mucho appreciated!
