Tabbouleh-style salad hangover cure

Tabbouleh is one of my favourite salads, and a great way to use up left over grains and herbs.  This is not traditional tabbouleh, but it was yummy nonetheless.  It's on the top right in the picture.



Tabbouleh-style Salad with Pearl Barley

I had some cooked pearl barley left over from another recipe which I wanted to use up.  So I decided to try it in a tabbouleh salad instead of the traditional bulgar wheat.  Tabbouleh is traditionally made with bulgar, mint, parsley, tomato, lemon juice and onions.  This is my take on it with what I had available.



Pre-cooked pearl barley (about 1/3 of a cup)
Lemon juice
Salt and pepper
Red onion
Olives
Parsley
Tomato
Olive oil (not pictured, it was already in the barley)

Amounts really are "to taste".



Dice your tomato and olives, add to the barley.



Finely chop the parsley, and add to the mix.



Finely dice the onion and tip it in.



Add lemon juice - a good long squeeze.  Add your olive oil at this point if you haven't before, to your taste.  Mix well.



Taste and season with salt (if needed) and pepper.  Add more lemon, oil, or parsley, if necessary.  Mix again.



Serve!  I had mine with a Boca burger sandwich and home-made fries with dip for a hangover cure Saturday lunch.
