froot salad
1 whole pineapple
quart of strawberries
2 kiwis
grapes
cottage cheese (medium sized tub (6 cups?))
pecans
cut pineapple in half along it's length (from bottom to leaves). scoop pineapple out into large bowl, leaving the outer shell intact.
chop the pineapple and add halved strawberries, chopped kiwi, and halved grapes into a large bowl. vary ingredients/amounts to your liking.
place cottage cheese and crushed pecans in bowl and mix.
place pineapple half on plate (scooped side up). spoon fruit mixture into pineapple. heap nutty cottage cheese on top.
mom's strawberry pie
2 cups water
3 tbsp corn starch
3/4 cup sugar
3oz (small pack) strawberry jello
1 baked pie crust
1 qt sliced strawberries
whisk water, corn starch, and sugar together. bring to slow bubble under medium heat and simmer until thick, stirring continually. once removed from heat, mix in jello packet.
place strawberries in pie crust and pour somewhat cooled mixture over them. cool for a couple of hours (overnight is best) and serve with cool whip.
also good in graham crust.
nancy's chicken
pack of 3/4 chicken breasts
can light cream of mushroom soup
3/4 small tub of light sour cream
package low sodium chipped beef
package of lean bacon
cover each breast with chipped beef, wrap with 2 slices of bacon, lay chipped beef side down in baking pan.
mix mushroom soup and sour cream and pour over chicken breasts. cook at 425 for 45 minutes. awesome with rice.
hommus
3 tbsp lemon juice
1/2 tsp cumin
2 crushed garlic cloves
can of chick peas (drain and save juice)
2 tbsp tahini
2 tbsp olive oil
put lemon juice, cumin, garlic, peas, and tahini in blender and mix until of a good consistency. use chick pea juice if needed.
place in bowl, top with olive oil. eat with tortilla chips or pita.

package of hot turkey sausage
chop onion and peppers seperately. cut sausage into inch long pieces, scissors work well.
put a dollop of olive oil in frying pan and heat to medium/m-h. add onion and sausage, stirring occassionally. when onions start browning, add peppers. cook until caramelized.
curry pork chops
3/4 pork chops
2 tsp curry powder
1/4 cup flour
1 can pears
1 can yams
from memory, so i'm not sure if amounts (curry and flour) are right.
place curry and flour in large plastic bag. use this to coat each pork chop. drain yams and pears (save pear juice).
fry pork chops with some olive oil on medium-high heat for 10 - 15 minutes in large frying pan, turning as necessary. lower heat and add yams, pears and maybe half the juice. cover and let simmer, stirring yams and pears occasionally.

salmon with brown sugar glaze
1/4 cup packed brown sugar
2 tbsp dijon mustard
2 tbsp chopped fresh dill or 2 tsp dried dill
1lb salmon fillet
1/2 tsp salt
1/2 tsp coarse pepper
preheat oven to 450
whisk together the brown sugar, mustard and dill in a bowl. sprinkle salmon with salt and pepper (optional). place the salmon on a baking pan covered with foil and spoon sugar glaze on top.
place in the oven and broil on middle rack for approx. 5 minutes until sugar glaze starts to to crust up. lower heat to 350 and bake for another 15 minutes. good with steamed broccoli.
i modified this from 4 6oz skinless salmon fillets. also, the original instructions have you broil 7 inches from the heat for 6 minutes, which really blackened the glaze. it was still good, but i've been toning it down since then.
CURRIED TURKEY(/CHICKEN) SALAD
1/2 cup light mayo
1/4 cup mango chutney
1 tbsp curry powder
1 tsp dijon mustard
1/2 tsp coarse pepper
2 cups cubed cooked turkey (chicken) breast
2 celery stalks, chopped
1 apple, cored and chopped
6 scallions, thinly sliced
1/2 cup chopped walnuts
1/4 cup raisins
whisk mayo, chutney, curry, mustard, and pepper in large bowl. stir in turkey (chicken), celery. apple, scallions, walnuts, and raisins. mix well. cover and chill before serving.
