Neil was up early to get the car in the shop for its extensive repairs. Breakfast was frozen breakfast sandwiches from Costco (better and cheaper than the "McMuffins" from Mickey D's).
As it turned out, they were not ready for Neil at the dealership, despite his having arranged this appointment weeks ago. The good news was that the reliable service person had returned, and so they were able to get things arranged. Neil's still over there. I am hoping he'll be back in time for my chemo tonight.
Last night, I make Coquilles St. Jacques. I skipped the little scallop shells and just made it in a casserole dish. No one to impress here but us, after all. I added shrimps to the recipe and poached both the scallops and shrimps in wine - a mixture of cream sherry and Gewürztraminer. (And since the recipe used up most of the Gewürztraminer, I felt quite justified in drinking the last of the bottle.)
While the seafood was poaching, I made up the Mornay sauce, which is based on a simple white sauce. One adds two eggs yolks and grated cheese (parmesan, in this case). I also added a few tablespoons of the liquid from poaching the shrimps and scallops, which gave the sauce a lovely texture and flavour.
Once the sauce was ready and the seafood poached, I sliced up the shrimps and scallops and mixed sauce and seafood together, topped it with grated cheese and popped it into the oven for about half an hour. I served it with garlic chicken rice and green peas with onions in a butter sauce. :-)
Tonight, being a chemo night, will not be nearly as fancy, but I did bake some bread to take to the nurses.
More on recipes at a future entry. I think I'm going to try and sneak in a nap while I'm waiting for Neil to get back.
