I know most folks think anything vegan will either be gross or ridiculously difficult to make. This could not be further from the truth. Vegan breakfasts aren't really that difficult to make, they just require you to rethink of what to make.

I stole this recipe from La Dolce Vegan" but did change a few things around.

Here's what you'll be needing:
Some sort of measuring cup.
A pan.
A whisk
A big bowl
A blender
An empty stomach

Ingredients:
1 cup flour (try to get some whole wheat, unbleached flour so it won't be too unhealthy)
1 tsp baking powder
1/4 tsp salt
1/8 tsp ground cinnamon (use more if you really like cinnamon)
1 cup soymilk
1 ripe banana
1 tsp vanilla extract (once again, use more if you like)
some vegan butter/margerine (you can find this stuff at Trader Joe's)

Directions: In the bowl mix together thoroughly flour, baking powder, salt, and cinnamon. In a blender blend the soy milk, banana, and vanilla extract until it's nice and smooth. Pour into flour mixture and stir until you get most of the lumps out (don't stir too long or else your pancakes will develop gluten & become tough in texture.) Oil your already medium-heated pan with some butter and pour in the pancake mix. Flip it over once the center starts to bubble & become sturdy. Do that for the rest of the batter and you're good to go.

Side note: Mendy & I love to put raspberry preserves on our pancakes with a bit of butter instead of syrup. Try it out!
