I spent all weekend cooking. I made, divided into single servings, and froze about 70 containers worth of stuff. I also made blackeyed peas and cornbread for dinner and taco meat for dinner Saturday and tonight. Lots of Pasta Roni and Hamburger Helper for lunch portioning along with some long grain and wild rice and some red beans and rice with sausage. To top it all off I made a triple layer cake with chocolate and white cake, raspberry (thinking of Amy saying rasP Berry) jam filling, and whipped butter cream frosting. I used some of the batter to make chocolate cupcakes injected with raspberry (rasP Berry) and more butter cream frosting on top. I also made it to the gym on Saturday for a good 45 minutes of cardio. If I can keep this up, I might try a cardio class and see if I have the lung power to make it through the whole class.
