Hey guys, guess what?
I finally fed my husband a culinary experiment that made him say, "It's good!" This is very exciting for me. He is not the type of man to say something like this glibly. We had a bunch of peppers in the fridge threatening to go bad, and a bunch of potatoes looking shifty in the root cupboard, so I decided to put them together in a delicate marriage overseen by some ground beef, a heap of Mexican seasonings and some cheese. Ah, love.
So! For those of a curious mind, this is how to make it. I had three peppers, so I'm going to say that this recipe will make 3 servings, plus some extra filling for snacking purposes and leftovers.
Ingredients:
3 bell peppers -- mine were orange, yellow and red
3 medium potatoes
1 lb of lean ground beef
1 quarter cup grated marble or cheddar cheese
.5 tablespoon each of: ground cumin, ground allspice, turmeric, paprika, garlic powder
.5 teaspoon each of: salt, white sugar(maybe a bit less), dried onion flakes
1 quarter cup water
Salsa and sour cream to taste
Step One: Bake your potatoes for about 40 mins at 400 degrees. Until they're still a bit crisp.
Step Two: Brown your beef and then drain the grease.
Step Three: Dice your potatoes into chunks of about a centimeter square. I like to eat the skins, but you could probably remove them if you'd like.
Step Four: Mix your potatoes with the beef in the same pan. Add all seasoning and the quarter cup of water. Mix well, until the potatoes and beef are completely coated, giving you a homogenous, yellow filling. At this point, it should be delicious.
Step Five: Cut your bell peppers lengthwise into halves and remove innards. Stuff the peppers with as much of the filling as they can handle. You will probably have some left over, but this is okay. Give it to your guests/family/self and call it an appetizer.
Step Six: Bake at 350 degrees in a pan with about a centimeter of water in the bottom and loosely covered in tinfoil for about 30 - 40 minutes. This should effectively steam the suckers. Feel free to fork them to check if they're cooked.
Step Seven: Remove tinfoil and sprinkle a bit of cheese and maybe salsa if you'd like. Bake for another five to ten minutes, until your cheese is melted.
Step Eight: Serve with a dollop of salsa and sour cream, and let the fiesta in your mouth begin!
