Straw/Raspberry White Chocolate Creme Brulee

Hey all!!
Coming to share a new recipe with everybody in my favorite category: Dessert!!
I got this off the back of the Ghirardelli package.

Strawberry White Chocolate Creme Brulee

Ingredients

  • 1 Bar of Ghirardelli Premium Baking White Chocolate chopped up (I suggest using Ghirardelli because it's REAL white chocolate, if cocoa butter isn't one of the first ingredients listed DO NOT USE IT! It means it's vanilla flavored wax/oil EW!)
  • 4 Large Egg Yolks (at room temp)
  • 1/3 Cup sugar
  • 4 tsp (or 4 tbsp) Sugar in the raw
  • 2 Cups Heavy Whipping Cream
  • 1/2 to 1 1/2 tsp of your choice strawberry or raspberry extract

Tools:
  • Medium saucepan
  • 4 - 4" diameter ramekins
  • 9" x 13" Baking dish
  • A whisk
  • Rubber spatula
  • Measuring cups


How to make it:
  1. Preheat oven to 300*F.
  2. Whisk egg yolks and 1/3 cup of sugar together till smooth
  3. Bring whipping cream to a simmer of medium-high heat.
  4. Add the chopped chocolate to the simmering cream, turn off heat and stir until the chocolate is melted.
  5. Slowly add the chocolate mixture to the egg mixture, whisking continuously until smooth.
  6. Whisk in your choice of raspberry or strawberry extract (the more extract the less white chocolate flavor and vice versa).
  7. Pour into ramekins.
  8. Place ramekins in baking dish and add water till it reaches about half way on the side of the cups.
  9. Bake until set, about 45 minutes.
  10. Sprinkle each cup with 1 tsp - 1 tbsp raw sugar ( I love raw sugar so I use 1 tbsp, but 1 tsp is all you need)
  11. Broil until the sugar caramelizes.
