The Wheels Are Turning. Yesterday's art a day.
I made up my own recipe for vegan stuffed shells yesterday and it was pretty good. I didn't know for sure it would be good until it was time to eat and everyone seemed to like it. Dave even said it was good. Dave's hard to please unless something has Real Meat in it. The filling was 2 packs of extra firm tofu (moisture pressed out), mixed with sauteed onions, garlic, mushrooms and chopped up vegan Italian sausage and a package of plain hummus. Some extra onion powder, salt and pepper. Topped it all with marinara and grated vegan parmesan cheese and then baked. I've used vegan mozzarella cheese in the past and that stuff is too soft (almost slimy) when it melts. The parmesan is better for baking.
We woke up to rain this morning and I can still hear it on the chicken coop roof via the baby monitor in there. But it's supposed to stop soon and I hope it does. I'm set up to go hiking with Candy at Two Mile and then in the afternoon I take Rainy for her haircut.
She won't look like this later today.
