Obsessed with chocolate cupcakes this week, for some reason?







These are just regular-style “please be whatever I have in the pantry” chocolate cupcakes. Recipe here. Replaced the oil with yogurt, as per usual because large quantities of oil makes me nauseous.



Then tonight, I made these crazy, tiny, gluten-free, dairy-free cupcakes that I’m eating too many of. I’m not taking a picture. Deal with it.

They have a weird texture due to the gluten-free flour combo I made, but I really like the blend I made for this recipe! I used:

1/2 c. Tapioca flour
1/2 c. Brown Rice flour
1/4 c. Almond flour
1/2 tsp. Xanthan Gum

It made for a pretty solid cupcake texture! I will definitely use it again.
