Mead update

I cracked a bottle of my long-term Earl Grey Mead a week ago. When I was bottling it, I was worried I let it ferment too long; it was extremely sharp and there was no sweetness left in it, or so I thought. These four months of aging in the bottle have *REALLY* changed it. It's mellowed considerably. You can definitely taste the honey in the background along with the orange. It's not a "sweet" mead, by any means. It's much closer to a red wine. But it's very nice; it's something you want to linger on your tongue for a long while, to savor the flavor.

And today, I'm starting up a honey and maple syrup mead. *This* one is gonna be a sweet one. ;)
