I'd be so happy to read more if you decide to write more! So Susan's living with a former Potential and I'm kind of glad you didn't turn Su into a Watcher herself, though she probably has the skills (if not all the knowledge) to do so.
And yes, tell them to stay away from the rings and the trains!
After Lucy's first encounter with a Watcher, none of the Pevensies are inclined to think highly of the Council. (This disapproval gets more pronounced over the years.) But because they also disapprove of demons eating humans and/or trying to end the world, they all keep tabs on their local supernatural neighbors and do some freelance demon-hunting when trouble arises.
Susan decided to act as researcher and magical support since she's never much liked physical fighting -- and particularly not close-quarters fighting. She'll do some sniping when required, though. The vampire population of London has developed a healthy fear of longbows. :)
