Or in other words, banana bread. This Guatemalan version is distinctive with lime, allspice and cinnamon (no nuts)
Pão de Banano
1 loaf (26 slices)
Ingredients
2.5 cups all-purpose flour
0.5 cup granulated sugar
0.5 cup brown sugar
3.5 tsp baking powder
1 tsp salt
0.5 tsp ground cinnamon
0.5 tsp ground allspice
1.25 cups mashed bananas (~2 large bananas)
0.25 cup milk
3 Tbsp vegetable oil
1 egg
1.5 tsp grated lime peel
1 Tbsp lime juice
Preparation
1. Heat oven to 350 F. Grease bottom only of loaf pan, 9 x 5 x 3 inches, or 2 loaf pans, 8.5 x 4.5 x 2.5 inches.
2. Mix all ingredients; beat 30 seconds. Pour into pan. Bake until wooden tooth pick inserted in center comes out clean; 9-inch loaf 70 to 80 minutes, 8.5-inch loaves 55 to 60 minutes.
3. Cool slightly. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing.
4. To store, wrap and refrigerate no longer than 1 week.
