So I tried the Chewy Gingerbread Cookies recipe posted by minnaleigh this morning. Quick summary: If you double the recipe as she suggests, the one ingredient not to leave undoubled is the flour!

Yes, I neglected to double the flour. The result was that most of the first batch melted into a big puddle and flowed easily off the pan. I got most of the heated pre-dough back into the mixing bowl and kneaded in a lot more flour. Wound up with a half dozen sort of molasses candies and ate a few cookies worth of crisped candy-cookie that I feared a stomach ache would result. (So far so good on that front.)

If I'd put in more baking soda, this might have been a more successful attempt at Hokey-Pokey than my first two. If it had been an attempt at Hokey-Pokey. A very seasonal flavouring for Hokey-Pokey. That recipe (sans seasonal flavouring) was courtesy of micheinnz.

So I've got what may be proper Chewy Gingerbread Cookie dough back in the fridge. The recipe says to chill it "at least an hour"... I wonder, will overnight be too long?
