Got to have Thanksgiving dinner at a friend's place, yesterday. Very much like US Thanksgiving. We had blackened turkey (an amazing recipe, see google or
http://bertc.com/blackene.htm (or netnews archives, or...)), stuffing, mashed potatoes, gravy, spaghetti squash, cole slaw, tomato salad, "pail" pickles, yams, and wild blueberry pie, pumpkin pie, or pecan pie for dessert. I had to restrain myself from adding superlatives to each of those! They were all homemade and all just amazingly delicious! I think I ate more than anyone else at the table, yet I wasn't overfull; I could have eaten more of everything before busting a seam!
I had to request the recipe for at least the pickles. I've never had better sweet pickles. The preparer told me it's all in the water: Too much sodium and they'd come out mushy. She used filtered water. I guess the other secret is similar to that of the turkey: Lots of remoistening.
