God is not omnipotent because he requires an agent that is outside of him to perform. The requisite of blood for forgiveness illustrates this. If god were all-powerful, he could have said "Abra-cadabra your sins are forgiven." By extension, what loving father could sit idle and watch his son be unnecessarily tortured when having the ability to intervene. Furthermore someone who sacrifices with full knowledge of the return of that which is sacrificed, isn't sacrificing at all.
