Soup!

We love Zuppa Toscana at Olive Garden, and I've made it several times in the past using copycat recipes off the internet. The only problem is that it uses sausage, bacon, chicken broth, and heavy whipping cream. No wonder it's so good! So tonight I printed off one of the copycat recipes (they all seem to be about the same) and substituted: Morningstar Spicy Vegan Sausage, Morningstar Vegan Sausage Crumbles, vegetable broth, and plain soymilk. It was really good! And much healthier, even if you're not too worried about animal protein and saturated fat. One of my favorite things about the soup is the kale, and that was the same, of course. (Not even organic). So I was excited, David was mildly appreciative, and Rosalind moaned about wanting real sausage but finished her soup off. And her Struen and her green beans. One more healthy meal into a child's body!
