Salmon Spinach Frittata

Olive oil, about 3 T
1 onion, chopped
1 red bell pepper, chopped/seeded
1 10oz box frozen spinach, thawed and squeezed dry
1 can salmon, drained and deboned
8 large eggs, beaten
salt and pepper

Saute onion and bell pepper in oil til softened.

Add spinach and salmon, season with salt and pepper, saute til heated through.

Preheat broiler to high and set oven rach about 5 inches from heat.

Pour eggs in to skillet and stir to distribute veggies and salmon.

Reduce heat medium low and cook (stovetop), sliding spatula under frittata to loosen,
until set underneath but still wet on top.

Place skillet under broiler and cook til top is golden, about 1-2 minutes. Slide onto a
plate and serve.
