Possible meals for the next few days:
Roasted beet and spinach salad, stuffed mushrooms
Enchiladas verdes
Veg sloppy joes, oven fries (or broccoli?)
Snacky appetizer night: roasted chickpeas, sweet and sour "meat"balls, cream cheese rangoon, carrot salad
Some kind of pasta (maybe stir-fry, to use up extra veggies?)
Also, if I have the energy later tonight, I'm gonna roast up some slices of zucchini to use in sandwiches for the next few days. I'm in a super sandwich mood.
So if I do the roasted beet salad and the roasted chickpeas, those will be two new recipes for this year; even tho I've planned to make both before, I never got around to it. Also, I'm planning on trying a new recipe for stuffed mushrooms, so I think that should count, too. I'll let you know how that goes and how they compare to my mom's stuffed mushroom recipe.

Kitchen Wench's recipe, here. This was actually two new recipes from me, b/c believe it or not, I'd never poached an egg before.
For the ragout recipe, I omitted the bacon. Also, b/c I only had button mushrooms, and not enough of them (there was an issue with my shitakes), I added in some kidney beans. This was a mistake: the beans overpowered the other flavors. But the earthy mushroom and red wine combination was really good. As were the poached eggs! I love that now that I'm back in SA I can find pasteurized eggs again, so I can enjoy runny yolks without worrying about salmonella.
Wow, typing this tired me out. I better get to roasting those beets before I decide to nap instead.
