We're having a chili cookoff at work tomorrow, and I offered to contribute. I used to make vegetarian chili often for potlucks many years ago, but I haven't made it in a long time.
I found two recipes that look good. One I got off cooks.com, and it's got beans, veggies, tomato sauce, and spices. The other recipe is from The Moosewood Cookbook. It is very similar, but also includes bulgar wheat as a meat substitute. When I used to make veggie chili before, I never included a meat substitute. Beans, onion, garlic, spices, and tomatoes were good enough for me. But I'm starting to consider including the bulgar wheat as an option.

Also, I decided I might like to include some fresh tomatoes from my garden in the chili. But when I went to look at the plants this morning they had been stripped almost bare of fruit. Just a couple of tiny green tomatoes are left where a few weeks ago there were at least half a dozen nice-looking green tomatoes. Bummer.
