I've been posting to 4k more with my recipes, so I will add some in here.
Cranberry tea:
3 cups water
4 green tea bags
1 mint tea bag
2 cups cranberry juice, chilled
ice cubes
Bring water to poil in a pot. Remove from heat and add in green and mint tea bags. Cover and let steep for 10 minutes. Remove tea bags and discard. Cover and chill for 2 hours. Stir in chilled cranberry juice. Serve with ice cubes and garnish with mint leaves or fresh cranberries if desired.
Rosemary bread
* 1 cup water
* 3 tablespoons olive oil
* 1 1/2 teaspoons white sugar
* 1 1/2 teaspoons salt
* 1/4 teaspoon Italian seasoning
* 1/4 teaspoon ground black pepper
* 1 tablespoon dried rosemary
* 2 1/2 cups bread flour
* 1 1/2 teaspoons active dry yeast
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select white bread cycle; press Start.
Oatmeal chocolate chip cookies
* 1 cup butter, softened
* 1 cup packed light brown sugar
* 1/2 cup white sugar
* 2 eggs
* 2 teaspoons vanilla extract
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 3 cups quick-cooking oats
* 1 cup chopped walnuts
* 1 cup semisweet chocolate chips
1. Preheat the oven to 325 degrees F (165 degrees C).
2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
3. Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
These are chewy and delicious! My new favorite:D
Lime and Basil Tilapia
* 4 tilapia fillets (about 1 pound)
* 4 tablespoons oil
* 2 tablespoons lime juice
* zest of 2 limes
* 1 tablespoon fresh basil, minced
* 2 teaspoons bourbon
* 1 teaspoon salt
* pepper to taste
Combine all ingredients except for the tilapia fillets in a resealable plastic bag. Turn to mix and add tilapia fillets. Seal and refrigerator for 30 minutes. Fry tilapia fillets for about 3 minutes per side over a high heat. When fish turns opaque and flakes with a fork it is done. Serve with a side of vegetables or chop up for fish tacos.
Greek style turkey burgers
1 lb ground turkey
1 cup crumbled feta cheese
1/2 cup olives, chopped (i usually use chopped salad olives)
1 teaspoon dried oregano
1 teaspoon italian seasoning
1 teaspoon dried parsley
1 teaspoon dried basil (optional)
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1. Combine all the ingredients in a large bowl.
2. Form into 4 patties, then grill.
3. Serve on burger buns with tomatoes and mayo, or on pita with tahini, tomatoes and lettuce.
Stuffed shells
1 lb. ground beef (use Italian sausage for more zest!)
1 8 oz. package cream cheese
1 can cream of mushroom soup, undiluted
1 c. broccoli
1 small green pepper, chopped
1 small-medium sized onion, chopped
1 pkg. lg. stuffing size shells pasta
Shredded Mozzarella cheese
Preheat shells according to package directions. Drain and cover with cold water to stop cooking and prevent sticking.
Brown meat and season to suit your taste. Drain liquid. Add cream cheese, broccoli, onions, and soup. Cook and stir occasionally until cream cheese is thoroughly melted.
Lightly grease or spray a large casserole dish. Gently fill each cooked shell with stuffing mixture and place open side up in casserole with edges just touching.
If you have any extra mix, just pour it on top of all the shells, and sprinkle on some mozzarella cheese:)
Bake in 325 degree F oven for 30-45 minutes, or until heated through.
A variation of this recipe for seafood lovers: Melt cream cheese with about 3 tablespoons of butter. Add soup, broccoli, and precooked frozen salad size shrimp or crabmeat (imitation crab is great).
