Herbed Cherry Tomatoes Over Pasta

Mar 01, 2010 17:35

One of my favorite WW's recipes and a general standby for us. If you skip the pasta and parmesan it's 1pnt per serving with four servings. We generally serve this like spaghetti or any other Italian dish. It's tasty and for 5 points it's totally worth it.

4 cups cherry tomatoes
1 tsp olive oil
2 cloves garlic cloves
1 tsp sugar
3/4 tsp ground basil
1 tsp ground oregano
1 tsp Italian seasoning
1/8 tsp ground thyme
3/4 tsp table salt
1 tsp ground black pepper
8 ounces uncooked spaghetti (4 cups cooked)
3 Tbsp Low fat Parmesan Cheese

Instructions
Preheat the oven to 400 degrees. Boil Spaghetti until done and then drain. Lightly spray a glass baking dish with nonstick spray. Put Spaghetti in a glass baking dish.

In a zip lock bag put tomatoes olive oil, garlic cloves, sugar, basil, oregano, Italian seasoning, thyme, salt and pepper. Shake until tomatoes are completely coated.

Pour contents of ziplock bag over spaghetti noodles. Sprinkle with Parmesan Cheese and bake in over for 10 minutes until tomatoes soften and crack.

4 servings. 5pnts each.

So this weekend was a nightmare. I had no idea how many points hibachi food would be. We went out with friends to this japanese steakhouse where they have the chef come out to the table and spin the knives and make the food in front of you. I looked at the menue and figured oh you know steak and chicken would be fine It couldn't be that many points right? Well while cooking it I'm sitting there realizing how much oil and crazy goes into that stuff. I'd banked on it being one of those days though so I just said alright I'll live through this. Lunch was a whopping 30 points. Think about it like this, Salad with a dressing akin to thousand island, steak that's cooked in tons of oil, chicken that's cooked in tons of oil, fried rice (also oil galore). That was crazy. I'll stick with the sushi next time. That stuff is horrible for you. Alas live and learn, I have 37 points a day and dinner I was able to get 3 tacos with just salsa on them. That was far better for me. I dipped seriously into the additional points per week that I try not to go too far into.

Sunday was better but it started out a little on the rough side. Irish Pub food is... well to be honest it's a heart attack waiting to happen. So I got a steak sandwich with a salad. I did forget to ask for the lite dressing on the side but they didn't drench the food which was good. I got them to put 1/2 the cheese they normaly put on the steak rather than a full serving which again was good. All in all 9pnt + 4 for bread + 2 for cheese + 1 for lite dressing and I was looking at 16 points. That's alright. I can live on that. A taco bell excursion on the road for a few more points and dinner at applebees (one of the few places that lists WW points on the menu). Sunday was much better even with some road trip snacking in there.

So lessons learned:
1) Stick with the sushi.
2) Modify what they offer on the menue and you can get better choices out of it.
