makes 12 tacos
Ingredients:
2 can of chickpeas, rinsed and drained
2 large avocado, mashed
1 large carrot
¼ cup fresh cilantro [I'll at least double this next time]
1 onion, finely chopped
1 Leak, finely chop whites
1 clove garlic, finely minced
1 lime juice
2 T soy sauce
2 tsp olive oil
salt to taste
12 corn tortillas
Instructions:
Preheat over to 350
Put carrot and cilantro in food processor or dice. Set asside in bowl.
Put onion and leak in food processor or dice very fine. Set asside in bowl
Put skinned, mashed avocado in bowl, squeeze entire lime into bowl. Salt to taste.
Heat olive oil in large skillet. Add Soy Sauce and them immediately add chickpeas. Saute
until exterior of the chickpeas are a dark brown.
Remove chickpeas but do not disgard oil. Place chickpeas in large bowl to cool slightly.
Put onion and leak combination into skillet with remains of the oil and saute.
Mash chickpeas into rough mix.
Place tortillas on cookie sheet and place in over for 6 minutes.
Fill taco shells as desired.
