I've fallen in love...

... with cashews.

They are so damn good. At Trader Joe's on Wednesday I bought six 1-pound packages of cashews. Two roasted/unsalted, two raw/unsalted, one roasted/salted, and one "World's Largest Cashews." I stocked up at TJ's because they were about half the price of the bulk cashews at the co-op grocery (which I'd been buying for the last week), and they taste just as phenomenal. Unfortunately, my cashew love may bring financial ruin in addition to ecstasy. My current rate of cashew consumption is about half a pound per day, not including cashew butter. Let me explain.

Arthur is a nut butter nut. He usually has at least three different nut butters in the refrigerator at all times. He let me try some Kettle Roasted Almond Butter. It was so good that I sprung for the stout $5, 11 oz. jar at the co-op the next day. To me, it's better than any kind of candy. But I ate it all within a few days. I couldn't limit myself to just one spoonful at a time.

Then, the other day Arthur bought a jar of Kettle Cashew Butter and let me try some. Heaven! I cannot help but grin with a spoon of that cashew butter in my mouth. Unfortunately, it's as expensive as the almond butter. TJ's cashew butter is more reasonably priced, so I bought two jars. The flavor doesn't hit as immediately or strongly as the Kettle, but give it a few seconds and it, too, delivers some heaven.

Why are cashews so expensive? In part because they grow like this:



They are actually seeds of the larger cashew fruit, that are contained in the little pod at the bottom of the fruit. Native to Brazil, the trees grow best in areas of sufficient heat and humidity.

Pretty amazing, huh?

Anyway, I'm going to go eat some cashews.
