food challenge

We have belonged to one CSA or another for, oh, at least 5 years now, maybe six. Currently we belong to Tantre Farm, and split our share with aular and jvankirk. However, they are out of town for the next month or so. Therefore we have an entire food share to use up. Can we do it? well, let's see.

The box this week contained:
- 3 beets (given to my parents since I can't stand them)
- a half dozen carrots (3 given to my parents)
- 2 cucumbers
- 2 eggplants
- 1 bulb garlic (by far the fastest veggie I use up!)
- 1 bunch of kale
- 3 leeks
- 1 huge sweet onion
- 2 green bell peppers
- 2 ears of corn (& I bought 4 more at the market)
- 1 quart fingerling potatoes
- 1 quart blue potatoes
- about 4-5 small yellow summer squash
- 1 pint orange cherry tomatoes
- 1 watermelon
- 1 purple basil plant

So on Saturday, I emptied my (somewhat scary) produce drawer, keeping only a few veggies that were still good, and made a list of dinners to use up our bounty.

- Indian dinner: chicken tandoori, butter soft squash and tomatoes, basmati rice or chapati, and carrot halwa
- Italian dinner: fettuccini with tomatoes, basil, and bread crumbs
- picnic dinner: Hungarian cucumber salad, blue mashed potatoes, and steak
- roasted dinner: roasted corn soup, panfried chicken breast, braised kale with bacon, and roasted fingerlings

Miscellaneous foods:
- watermelon/mint/feta salad
- babaghanouj
- leek & potato soup, or leek stock to freeze if J doesn't want soup

The Italian dinner will be made tonight since I don't need to go to the store for anything, and it's quick. The only things I need are for the Indian dinner, which requires yogurt and nuts.

So we have many plans. We may, however, need volunteers to eat all this food, since I'm not sure we have enough stomachs. Any takers? :-)
