I'm trying to update more often. I go to my friends page numerous times a day - why can't I use one of those times to update?
So here I am! And I'm sick. I woke up yesterday morning feeling like I've been hit by a truck - incredibly achy body, no energy, sore throat, swollen glands. Such fun! I was scheduled to sub, so I had to cancel that. Not that I could really afford to miss a day of pay, but what can you do.
Today more cold symptoms have developed, so it's probably best to stay home. Which means, Katie, I won't be coming to your house party. :-(
But my energy is higher today, so I decided to explore the world of gluten-free cooking. My mom had gotten a gluten-free cook book while we were in Arizona, and this morning I looked at the recipes to find things to cook this week. Some things look really good and easy, like "Pan-Seared Rosemary Pork Chops with Peaches". Completely gluten free! Yay! And I'm going to try a Shrimp Bisque later this week, providing I am well enough to not spread my germs to my parents, lol.
However, eating gluten-free AND low-calorie/low-fat/low cholesterol is a bit tricky. Luckily, I've found some recipe calculators that can help. I'm doing a free trial of Recipie Calc 4.0, which was one of the few programs that allowed me to add a new ingredient. Many of the online sites didn't allow me to do that, and those sites did not have gluten-free substitutions, like a baking mix.
Today I made apple muffins with Pamela's Baking and Pancake Mix. They're good, and at 149 calories is a nice substitute for a bagel. I overdid it already on the cholesterol intake today in between these muffins (which by themselves aren't that bad) and the two-egg omelette with cheese I made for breakfast. Must watch that! But so far, caloric intake is on track. I've got 777 calories left for dinner and a snack, which should be fine (I hope).
Time to go crash on the couch for a bit. Hope your Saturday is going well!
