- 1 medium zucchini, quartered and cut into large pieces
- 3 medium potatoes, peeled and cut into large chunks
- 1/2 medium sweet onion chopped.
- 2 cloves garlic, sliced
- 1/2 cup dry Italian bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1/2 cup of butter
- red pepper flake to taste
- salt to taste
- ground black pepper to taste
Directions:
- Preheat oven to 400 degrees F (200 degrees C).
- In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, butter, and olive oil. Season with red pepper flake, salt, and pepper.
- Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.
Notes:
I was a little scared to attempt this dish as I did not like Zucchini as a child. I attribute it to the monstrous green Zucchinis that everyone was passing around in the 70s because they had the skin of a football and flavor of cardboard. This will make a side that is tasty and the Zucchini palatable.
