Since
khirainshambles shared some recipes lately, I decided to share some of my favorite of my mom's own recipes.
Cheese Appetizers
1-2 loaves of bread
16 ounces of grated cheddar cheese
12 slices crisp bacon (Mom uses Oscar Meyer's Real Bacon Bits instead)
1 large onion minced or green onion
1 1/2 cup Hellman's mayo
Pepper to taste
(party sized... can be reduced)
Slice bread in half. You may wish to cut off crusts. Try it both ways and see your preference. Mix remaining ingredient and spread onto bread. You may play with the mayo amounts. It should be thick but able to spread. This can be made ahead of time and frozen at this point. The day of the party place frozen strips onto a baking sheet. (It makes a lot and can be used for more than one event by keeping the rest in the freezer) Bake at 400 degrees until browned, about 8-10 minutes.
The Best Crockpot Potato Soup
5 lbs. potatoes; peeled and coursely chopped
1 sm. onion; chopped
8oz. cream cheese; softened
3-14.5oz. cans reduced sodium chicken broth
1can cream of chicken soup
1/4t. pepper
GARNISHES:
crisp bacon; crumbled
shredded cheddar cheese
sour cream
sliced scallions
Put potatoes and onion in crockpot.
Combine the cream cheese, chicken broth, cream of chicken soup and pepper. Add this mix to the crockpot.
Cover and cook on LOW for 8-10 hours or on HIGH for 4-5 hours.
After cooking time, mash the potatoes if you want the soup to be thicker.
Ladle into bowls and garnish. (I use bacon and cheese, but you might have other preferences)
Maple Salmon
1/4 cup maple syrup
2 tablespoons soy sauce
1 clove garlic, minced
1/4 teaspoon of garlic salt
1/8 teaspoon ground black pepper
1 pound salmon
1. In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
2. Place salmon in a shallow baking dish and coat with the maple syrup mixture. Cover the dish and marinate the salmon in the refrigerator 30 minutes, turning once.
3. Preheat oven to 400 degrees F (200 degrees C)
4. Place the baking dish in the preheated oven and bake salmon 20 minutes, or until easily flaked with a fork.
Ranch Oyster Crackers
1 (1 ounce) package ranch dressing mix
1 teaspoon dried dill weed
1/2 cup vegetable oil
2 bags oyster crackers
1. Preheat oven to 250 degrees F (120 degrees C)
2. In a large bowl, combine the dressing mix, dill weed, and vegetable oil.
3. Add oyster crackers and toss to coat evenly.
4. Spread evenly over a baking sheet and bake for 15 to 20 minutes, stirring gently after 10 minutes. Remove from oven and allow to cool.
