fish cakes

Mix...
2 cups mashed potato ) microwave-steamed with lid on, in
1/2 cup mashed kumara ) 1/2 cup water, drain, save water
2 chopped skinny onions [spring onions]
1 415g can pink salmon ) drain, save liquid
2 teaspoons finely chopped fresh ginger [or pre-chopped out of a jar]
2 teaspoons dark soy sauce
2 teaspoons fish sauce
1/2 teaspoon 5-spice
...should be thick mixture that holds together...
...form into 12 balls, flatten & grill til pale brown, turn over & grill second side.

Mix in microwave-safe bowl...
saved fish liquid
saved steaming water
1 finely chopped thin onion
1 teaspoon finely chopped fresh ginger
1 teaspoon dark soy sauce
1 teaspoon fish sauce
1 pinch 5-spice
2 teaspoons sugar [palm sugar or raw sugar]
1.5 teaspoons cornflour
...nuke 3 min on high, whisking after each minute.

Make a salad of shredded lettuce, grated carrot & julienned cucumber.

Serve fish cakes on salad with sauce for dipping.
