CSA Week 3 (for me anyway!)

I've been traveling for a few weeks, but I finally got to partake of the CSA share this week!

We got -
3 heads of red cabbage
2 zucchini
5 summer squash
1 lb. of carrots
1 bunch of kale
1 bunch swiss chard
1 bunch scallions
1 bunch beets
1 green pepper
1 bunch of basil

We've REALLY enjoyed the share this week.  Less greens and more other colors.

So, far I've made these meals using at least one item from the share:
warm goat cheese salad with roasted squash and beets
black bean burritos with sauteed kale
thai tofu stirfry with carrots, scallions and peppers
quiche with tomatoes, feta, and basil

Mmmm....yum.
