Do you have a Trader Joe's nearby? If not -- you poor, sad bastard.

If so, here's a super-quick and fairly healthy fried rice you can make from handy Trader Joe's ingredients!

Blinkie's Superfast Kinda Healthy Fried Rice Starring Trader Joe's

Ingredients:
1 packet frozen Confetti Rice (rice with lemongrass and baby corn)
1 package Healthy 8 Chopped Veggies (cabbage, jicama, brocolli, carrots, etc etc, comes in a circular plastic container)
1 package baked tofu OR 1 package Just Chicken, depending on whether you're a meaty or a veggie

"spices"

Instructions:
1) Dice the baked tofu or chicken, and throw the Confetti Rice in the microwave per the directions.
2) Heat up some oil in a pan or wok. I generally don't cook at actual stir fry temperatures, so you can use a low smoke point oil like olive or sesame.
3) If you want, heat some spices in the oil. I put in three cubes of frozen garlic (don't judge me) and a few shakes of red pepper flakes.
4) Throw the veggies in the pan and cook em for a while. I dunno, however long you want to. A few minutes maybe?
5) Throw the tofu or chicken in, stir the shit out of it, and let everything get heated through.
6) Open up the now-cooked package of rice and throw it in, and stirstirstir.
7) Maybe pour on some soy sauce. You have soy sauce right?
8) Turn off the burner cuz that shit is done!

And that's some tasty sorta-fried rice you can make in like ten minutes, with a healthily high vegetable quotient. The kind of vegetables you're supposed to eat.
