It's a lovely day today. Last week's rain brightened the landscape. Now all the greens seem neon, vivid, alive. Wildflowers abound. I picked up a box of farm fresh veggies today; they'd been handpicked this morning. I feel overwhelmed by green. Turnip greens. Collard greens. Spinach greens. Green leaf lettuce. Kohlrabi greens. Green swiss chard. Green mint. Green parsley. The green leaves on radishes. This is the month of GREEN.
At least I got some sweet yellow onions out of the deal.
They're not green.
Summer is all about color. Reds, yellows, pinks, orange. Spring veggies are green, white, and purple, but mostly green. I'm going to go make a curried lentil & turnip soup. It'll look green when I'm done thanks to the green lentils and turnip greens.
Most of the time, green is my favorite color.
OMG!!!! DID I TELL YOU ABOUT MY NEW FAVORITE DESSERT????
It's so easy. We're eating it at least once a day.
Here it goes:
Mix a large dollop of creme fraiche (cultured sour cream works fine, too), a small dollop of your favorite raw nut butter (we've tried almond and peanut, both work), and a smidgeon of raw honey together in a dessert cup. Voila!!!
It sounds weird, I know. But it's heavenly. And it makes a great, nutrient-dense snack for the kids (not to mention for yourself).
