I had leftover sweet potato and sausage hash.
I mixed in about 3 slices of bread cut into 1/2 in. squares, 2 eggs, 1 cup of milk, and 8 oz. of cheese and poured it into a 9 in. pie dish. It went into the oven at 350 degrees for about a half hour. I knew it was ready when it was crispy and golden on top.
Sweet potato and sausage frittata. YUM.
