Usually nano if in a text window, fallback is vi because that's usually part of Busybox. If it's a GUI then most likely kate, although mousepad/leafpad are options if it's not there. If I'm using Windows then I use med.
SubEthaEdit, which I suppose is closest to Notepad. But I'm not sure: I use it as though it were (except when I'm also using the nifty collaborative editing mode), but sometimes it does funny things when I use brackets and shortcut keys, and they well be based on something like Vi or Emacs. Dunno, never used them!
