Star Trek: The Experience is necessary from a geek standpoint. You'll lose nerd points if you don't go. They even have a Star-Trek themed casino next to the tourist site. And you can get your picture taken on the bridge of the Enterprise. How cool is that?
I've been to the Shark Reef and it was OK if you're a shark fan. It's basically just an aquarium, albeit one where you can see sharks swim over your head. I think it's pretty cool, but I'm also a science geek. I'd recommend it if you've been to your favorite tourist visits at least once, but it's not exactly quintessential Las Vegas.
I haven't been to Penn and Teller, but I'm now regretting it now that I see it on your list. And there's the Cirque de Soleil shows if you like watching circuses on acid.
I like the pirates at Treasure Island and the Bellagio fountains just as something to pass by, but they don't really require too much planning or a budget. Actually, the Lion Habitat is similar to those as a walk-by, so you can probably see it on the way to going to something else in the Strip if you'd like. And you're not a clubber, so I guess there's no point in recommending those.
Actually, you may or may not enjoy it, but I'm betting that some of your friends would pay good money to see a picture of you in the gondola ride at the Venetian.
The other thing I was thinking is that the restaurants in Vegas are really nice. If you enjoy good eating, you definitely want to be scheduling a couple of good meals while you're there.
