nifty steak grilling tip

Last night, while surfing the net, I stumbled upon a blog post that claimed one could turn a cheap steak into something more akin to a filet by coating it in a thick layer of salt one hour before grilling it. Click the link to get an idea of the basic science of how and why this works.

Like you might be now, I was somewhat skeptical about this technique. So tonight, I bought a $4 New York strip steak and coated it with kosher salt, and stuck a big spud in the oven. An hour later, I rinsed the salt off of the steak and patted it dry, sprinkled some black pepper on it then threw it on the grill until I guessed it was medium rare. I let it rest while I added toppings to my baked potato, and then sat down to eat.

Folks, this trick works like a charm. My steak was sooo tender and juicy, and the saltiness went all the way through without being overbearing. If like me, you weren't aware of this trick, I highly recommend you give it a try next time you get the hankering for a thick slab of meat on a low budget.
