Oooh, a tricky one. Rather than a 'theme' per se, I'd rather open a warm, cozy, friendly restaurant that caters to people with eating restrictions. Coming from a family where all four of us are on four different diets (low-fat, gluten-free, weight-loss and gluten-free lactose-free milk protein-free fructose-free - don't ask 'what can she eat?' because the answer is 'not a lot'.)
So instead of different sections of the menu for starter, main, sides, dessert etc, I'd have sections for coeliac-gluten intolerant, dairy-free, nut-free, kosher-halal compliant, vegetarian, etc.
