a recent recipe

I dreamed up a tomato-based sauce on the drive to Portland, which I served with gnocchi. It turned out well. I'm jotting it down here for posterity.

1/2 cup diced onion.
3 cups diced, seeded tomatoes
1/2 cup minced pepponcinis
1 1/2 tablespoons dried basil
salt and pepper to taste

Saute the onions (preferably in olive oil, I've been keeping the calories down for royalbananafish, so I just sweated them down in a non-stick pan) and the tomatoes with salt and pepper until the tastes begin to marry. Add the basil, and simmer for 40 mintues. Remove from heat and stir in the pepperoncini (if you cook it with the onion-tomato mixture, the skins will harden and get woody.) Spoon over gnocchi or pasta and serve.
