Self publishing?

I'm seeing the self-publishing news making the rounds of teh interwebz with great interest, though I have not had time to do anything more than skim the lengthy articles (I'm writing a crapton of new material for work, and it takes up a lot of time). But the one thing I don't see addressed --

In the Dean Wesley Smith post, he talks about some people wanting the "protection" of traditional publishing, with the implication that no, some people can't handle control of their own careers. That's not what bothers me -- I do make a great deal of my current income freelancing (it's what enables me to actually have a standard of living for the first time in a goodly while), so it's not the career management I worry about. But I haven't published a novel before. And I've seen what happens to authors I really like when they decide not to let their editors edit them anymore (of the ones I'm certain about, they have rarely remained authors I like). So what about the people who want not "protection" or someone to manage their careers, but a competent editor to actually make their work better. Do such options currently exist in the self-publishing field?
