I've been saying that even if nothing else comes of this, the SCD diet will have been worth it because it's taught me to appreciate real food again, without all the additives and things that are seemingly inescapable in anything you can buy off the shelves. Because I'm avoiding any complex carbohydrates (that's all refined sugars and grains), I've got to prepare everything myself.
Tonight's fare, because I'm back on the intro diet to reboot the system, is chicken soup and cheesecake (the cheesecake made from the yoghurt I turned into cheese).
The cheesecake experiment is... interesting. I dripped the yoghurt for 8 hours, but I think it could have done with some extra wringing, because there was a LOT of liquid in there. To the point at which, when I took it out of the oven, it peed through the cracks in the springform. Really, there's no other word for it. I looked back at the stove, and there's this yellow puddle spreading out from under the cheesecake. I'm hoping it's just because the yoghurt cheese was really runny. I took it out of the springform and stuck it back in the oven to dry out a bit, but the damn thing has been in the oven since 8 (it's now 10), so it should bloody well be done by now.
There's more yoghurt on the go now. I'm going to ease back into it with a bit less gusto than I used initially -- I understand now that you're supposed to work your way up to that 3-cups-a-day maximum.
But it's been really fun. I'm actually enjoying this, and the feeling of satisfaction when something comes out right is interesting.
The freedom from the pain and associated discomforts that I had before going on SCD is nice, too.
